Egg Bhurji is a popular Indian scrambled egg dish. Here's a simple recipe:
*Ingredients:*
- 4-6 eggs
- 1 small onion, finely chopped
- 1 small tomato, diced
- 1-2 green chilies, chopped (optional)
- 1/2 teaspoon ginger paste
- 1/2 teaspoon garlic paste (optional)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- Salt, to taste
- Chopped cilantro, for garnish
- Oil or butter, for cooking
*Method:*
1. Heat oil or butter in a pan over medium heat. Add cumin seeds and let them sizzle.
2. Add chopped onions and sauté until translucent.
3. Add diced tomatoes, green chilies, ginger paste, and garlic paste (if using). Cook until tomatoes are soft.
4. Break eggs into a bowl and whisk them. Add salt and turmeric powder.
5. Pour the egg mixture into the pan and scramble the eggs with a spatula, breaking them into small pieces.
6. Cook until the eggs are fully set and fluffy.
7. Garnish with chopped cilantro and serve hot with toast, paratha, or rice.
*Tips:*
- Adjust the amount of chilies and spices according to your taste preferences.
- Add other ingredients like bell peppers or mushrooms for added flavor and nutrition.
- Serve with a side of naan or rice for a filling meal.
